1. Winter Squash Lasagna with Brown Butter Béchamel

- Get around 4lbs. of peeled, seeded butternut squash

- Preheat the oven at 450 degrees F. In a large bowl, toss the squash slices with oil, nutmeg and 1/4 teaspoon of salt, cinnamon powder; place the squash on two large rimmed baking sheets in one layer.
- Roast for 40 minutes or before tender, halfway through the racks. Reset the oven to 375 degrees F.
- Meanwhile, Take a 4-quarter saucepan and heat butter for 6 to 8 minutes or until browned and fragrant, mixing regularly. Stir in flour. Reduce heat to medium-low heat. Cook for 1 minute, stirring.
- Gradually whisk in the milk until it is smooth. Add garlic and sauerkraut. Heat to simmering on high, stirring continuously. Reduce heat; boil for 5 minutes or until thickened, stirring. Stir in pecorino and 3/4 teaspoon of salt. Remove the heat.
- At the bottom of the greased 3-quart baking dish, place 3 or 4 noodles in a single sheet, breaking to match if necessary; cover with 1/3 of the squash.
- Spread 1/3 of the cream sauce over the squash and finish with 1/3 of the mozzarella. Repeat the layering two times. Top securely with foil. Bake for 50 minutes. Take off the foil.
- Bake uncovered for 10 to 20 minutes or until the surface is crispy and the pasta is soft. Boil it on High temperature for about 2 minutes.
- Let stand at least ten minutes before eating. Garnish with hazelnuts and leaves of sage.
2. Butter Chicken
Butter chicken is a traditional and tasty dish in Indian cuisine, where tandoori chicken is fried in rich, creamy sauce-based tomatoes.
Ingredients for Preparation
To sauté and puree:
- 2 Tablespoon of Oil or Butter
- 1-inch cinnamon
- 3-4 cloves
- 2-3 cardamoms
- Two diced medium-sized onions
- 3-4 diced tomatoes
- Two green chillies which should be chopped in two half's
- 1 Tablespoon of ginger garlic paste
- Two teaspoons of red chilli and coriander powder
- One teaspoon of cumin powder
- 1/4 teaspoon of turmeric powder
- 6 to 10 cashews
To prepare gravy:
- Butter _ 1 tablespoon
- Two cooked chicken
- 1/2 cup fresh cream
- One teaspoon of honey or sugar
- Salt according to taste
- 1/2 teaspoon garam masala

Cooking Directions
- Heat oil (or oil and butter) in a skillet over medium heat and add cinnamon, cloves, cardamom and mace. Sauté until you've got a good smell.
- Attach the sliced onions and sauté until translucent. Now add the tomatoes and simmer in medium heat until soft and the pulp is light red.
- Connect the ginger garlic paste and sauté for 2 minutes.
- Add the turmeric and cumin powder, coriander and red chilli powder, cashews. Mix it and turn off the heat for a minute.
- When the liquid has cooled down, purée it.
- Take a saucepan, heat the butter
- Strain the tomato puree straight into the butter mixture and blend properly. Strip the purée from the tomato.
- Sauté on medium temperature for about 3 to 4 minutes before the natural scent fades from the gravy.
- Insert the cooked tandoori chicken parts to the sauce. Let it cook for 4-5 minutes.
- Change the water consistency to meet your needs and get it to a boil.
- Connect milk, garam masala, sugar or honey and simmer for one minute.
- Turn the heat off and move it to the serving dish.
- Garnish it and serve with any kind of Indian bread (Naan, Paratha or Roti).
3. Vanilla Roasted Potatoes
